This is the pork equivalent of a beef filet mignon. Delicate and flavorful, pork tenderloin is highly sort after for both roasting and stir-fry. Our favorite way to cook is simply seasoning it with salt, pepper, and Italian seasoning, then seared in the cast iron pan before roasting in the oven. When done right, it is crispy on the outside while juicy and tender on the inside.
